Lemon rind and ginger.

Palate

Bright and concentrated citrus and floral notes with a layer of lusciousness that lingers on.

Winemaking

A section of our Riesling block was left to develop botrytis following harvest before being handpicked. The fruit was left on skins for several hours before whole bunch pressing. Daily tasting during fermentation was key to finding the balance of flavour between acidity and sugar to find the “sweet spot” to stop the fermentation with some residual sugar.
