Winemaking

The fruit was handpicked and selected for botrytis, then left on skins for several hours before whole bunch pressing. Daily tasting during fermentation was key to finding the balance of flavour between acidity and sugar to find the “sweet spot” to stop the fermentation with some residual sugar.

Mandarin peel, ginger and dried apricots with hints of honey Concentrated mandarin and apricot, some tropical notes coming through. Balanced sugar with a slatey minerality carrying the back of the palate.
